मिक्स वेज सब्जी एक प्रसिद्ध सब्जी है जो हर भोजनालय / रेस्टोरेंट मे मिलती  है और पसन्द की जाती है। मिक्स वेज कई प्रकार से बनाई जाती है। मैंने कई तरह से मिक्स वेज बनाकर देखा है पर सबसे स्वादिष्ट सब्ज़ी निम्नलिखित विधि से बनी।  आप भी इस मिक्स वेज बनाने की विधि को आजमाएं और बताएं कैसी बनी आपकी मिक्स वेज।  

Ingredients

  • Green Peas - 1 Cup
  • Carrot - 2
  • Cauliflower - 1 Cup
  • Potato - 1
  • Capsicum - 1
  • Green Beans - 1 Cup
  • Tomato - 2
  • Onion - 1
  • Ginger Garlic Paste - 1 Table Spoon
  • Curd - 2 Table Spoon
  • Full Cream - 2 Table Spoon
  • Green Chilly - 1
  • Red Chilly Powder - ⅓ Tea Spoon
  • Turmeric Powder - ½ Tea Spoon
  • Asafoetida (हींग) - a Pinch
  • Cumin Seeds - a Pinch
  • Garam Masala - ½ Tea Spoon
  • Oil - To Fry
  • Salt - To Taste

Method

Step 1

Wash all veggies in water and cut into small dices/florets except tomatoes and onion.

Step 2

Deep fry these vegetables until slightly brown. You may first add hard vegetables like potatoes, carrots and then add others like capsicum.

Step 3

Take vegetables out of oil with a perforated spoon.

Step 4

Grate tomatoes or cut them very finely. Chop onion as well.

Step 5

Take extra oil out of the kadai/deep frying pan. Now add cumin seeds, asafoetida and chopped green chilies. fry a little, and then add onion. Fry until onion turn transparent.

Step 6

Add ginger garlic and fry till ginger garlic is fried well. Next add turmeric powder, red chilly pwd, garam masala powder and tomatoes and cook till oil separates.

Step 7

Lower the flame, add whisked curd and stir continuously. Add cream and keep stirring untill the mixture starts simmering.

Step 8

Add ½ cup water and bring to boil. Next add the fried vegetables and paneer cubes (optional) and simmer on low flame for 2 minutes.

Step 9

Add salt and adjust seasoning. The gravy will get thickened as it is cooked. Serve with Parantha, Poori or Chapati.
